Hal is most certainly old enough, but I'd imagine things have upgraded a bit from the stuff he used to fly back in his day. He'd still have the general grasp of it all, and after a few test flights he'd be good enough to teach, I believe.
If we go with the idea of Clone Wars era ships, those would be closer to Hal's level of expertise, so he'd be all over those.

Zeke is rated for Clone Wars era ships. He'd be wiling to teach Etas to people, and would be happy to learn X-Wings.
Zen's qualified on most starships. His specialty in the Force is the flight-related stuff - Force Immersion, Instinctive Astrogation. Anything you need flown, Zen's your man
Carré asks me to mention that she'll both help teach the X-wing, and also run a few sims on TIEs - wouldn't be a bad idea to know a little about how to fly what the enemy will most often be using.
This is probably going to have to wait a week or two because of complications getting my internet. Sorry for the hold-up folks.
Once I've got proper access I'll talk to people about including them as instructors: I think it's important that we don't go overboard though. The emphasis needs to be on the rookies who are learning: too many tutors might make the character count a little unwieldy.
